In this breakfast we are using radishes to replace potatoes. Season your radishes directly and they will take on whatever flavor you give them. Add them to your chorizo and eggs and get your potato fix while staying within your macros.
10 Large Eggs
8 oz Chorizo
1 Lb Radishes
1 TBSP Heavy Cream
¼ tsp Salt
½ tsp Pepper
1 tsp Onion Powder
1 tsp Garlic Powder
Rinse radishes and cut off ends and cut into small quarter pieces. Heat a skillet on medium heat and add about 1 TBSP oil.
dd radishes to skillet and season with salt, pepper, garlic powder and onion powder (optional)
Once radishes are tender, move to one side of the skillet and on the other side add in the chorizo and cook down for about 3 to 4 minutes and then mix in with the radishes.
Beat eggs and mix in 1 TBSP Heavy Cream and pour into skillet and combine with chorizo and radishes.
Cook until eggs are cooked.
