Ingredients:12 oz Bag Frozen Cauliflower Rice 1/4 Onion 2 tsp Minced Garlic 1/4 tsp Black Pepper 1 tsp Chicken Boullion 2 tsp Tomato Boullion 2 TBSP Tomato Paste 4 TBSP Water 1 tsp Cumin 1/2 tsp Garlic Powder 1 tsp Cilantro Instructions:In a skillet on medium heat, place onions and cook 4 to 5 minutes Add in garlic and cook until fragrant (about 3 -4 min) Add bag of frozen cauliflower rice Add in seasonings , tomato paste and water Stir until cauliflower rice is well combined with paste and seasonings If you have any liquid in your skillet from the cauliflower, cook until water is dissolved. You want to cook the liquid out of the cauliflower. Add in fresh cilantro or you can also use dried. Once liquid is cooked out of the skillet your rice is done. You may not have any liquid if you squeeze the water out of your cauliflower or microwave before adding to skillet. You may also use a head of cauliflower if you prefer to shred it into rice yourself. Ingredients:2 lbs Ground Beef 1/2 Large Onion 2 TBSP Minced Garlic 4 TBSP Taco Seasoning 8 Large Eggs 10 oz Can Rotel, drained 2 1/2 Cups Shredded Cheese 1/2 Cup Water 1/4 tsp salt 1/4 tsp pepper 1 tsp garlic powder 12 x 9 Pan Instructions:Add oil to skillet and add onion to Sautee. Cook 3-4 minutes and add garlic. Cook until fragrant about 2 to 3 min. Add ground beef and cook until browned Drain meat and add back to skillet Add taco seasoning and water and mix well until ground beef is well seasoned In a bowl, combine ground beef, can of drained Rotel and 1/2 cup shredded cheese. Mix well and add to baking dish. Spread mixture evenly. Add 8 eggs to bowl with 1/2 cup Heavy Cream. Add in salt, pepper, garlic powder and whisk until well combined Pour egg mixture over ground beef and make sure it is all covered evenly. Add the remaining cheese as the top layer over the eggs Bake at 350 for 30 - 35 minutes After removing from oven, let sit for a few minutes before slicing Top your Taco Bake with your favorite toppings.
