90 Second Keto Bread

Ingredients:

3 TBSP Almond Flour (or 1 TBSP Coconut Flour)
1 TBSP Melted Butter
1 Large Egg or ¼ Cup Egg Whites
¼ tsp Baking Powder
1 tsp Everything but the bagel seasoning or any seasoning you like​
 ½ tsp Sweetener
Pinch Salt

Instructions:

Melt 1 TBSP Butter in microwave safe ramekin or coffee cup
Add in remaining ingredients and mix together
Tap cup on counter to get rid of air bubbles
Microwave for 90 seconds
Turn cup upside down and slice 


You can use these just like that for sandwiches or burgers or you can toast them. Although they will toast in a toaster, I recommend toasting them in some butter in a skillet on medium heat. 

Toasted you can enjoy them with cream cheese, jelly and butter or anything else you want. 

You can also freeze these for up to 3 months or keep in the fridge for about a week.

Keto Chicken Alfredo Bake

Instructions:

For the Sauce:
2 Cups Heavy Cream
2 TBSP Butter
1 Cup Parmesan Cheese, shredded
1 tsp Garlic Powder
1 tsp Italian Seasoning
½ tsp Pepper
Salt to taste


For the Chicken:
5 Cups Chicken
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Paprika
1 tsp Italian Seasoning
¼ tsp Pepper
Salt to taste

Remaining Ingredients: 
5 Cups Frozen Broccoli
2 Cups Alfredo Sauce
1 Cup Mozzarella
1 Cup Parmesan 
⅔ Cup Crushed Pork Rinds

Instructions:

Prepare the chicken by cutting it into cube size pieces. Heat a pan on medium heat and add in 1 TBSP oil and place in chicken cubes once hot and season with garlic powder, onion powder, paprika, italian seasoning, salt and pepper. Cook until done. Set aside into a large mixing bowl.

If you are using a frozen bag of broccoli microwave for ….

Add Broccoli, ½ cup Mozzarella, ½ cup Parmesan into a bowl with chicken and mix until combined. 

In a 13x9 pan add in the chicken and broccoli mixture 

Pour the alfredo sauce on top of the mixture in the pan just enough to cover the top. 

Add remaining parmesan and mozzarella cheese on top

Add layer of crushed pork rinds on top 

bake at 350 for 35 minutes

Keto Strawberry Sauce Topping

Ingredients:

4 Cups Strawberries
½ Cup Water
2 tsp Lemon Juice
¾ Cup Sweetener (I used Erythritol)
1 tsp Vanilla Extract
½ tsp Xanthan Gum
Small splash of liquid stevia (if using Erythritol)

Instructions:

Add strawberries and sweetener to a small saucepan on medium heat. Allow to cook about 10 minutes to allow strawberries to create juice. Add in remaining ingredients except the xanthan gum. Stir until combined. To thicken the sauce, sprinkle in xanthan gum very slowly, adding in only a tiny bit at a time. Cook about 5 more minutes to allow the sauce to thicken. 

Remove from heat and pour into a mason jar. 

Use this to top desserts such as Cheesecake or in yogurt or even on pancakes or french toast.
