Keto Broccoli Salad

Ingredients:

  • 1 lb fresh broccoli, cut and rinsed (can use up to 1.5 lbs)
  • 1 lb bacon, cooked and crumbled
  • 1 small red onion, diced
  • 1/4 cup sunflower seed kernels
  • 1 Cup Mayonnaise
  • 1/4 Cup Sweetener ( I used Monkfruit)
  • 4 tsp Apple Cider Vinegar (1 TBSP + 1 Tsp)
  • 1/2 Cup Shredded Mozzarella Cheese

Instructions:

Cut broccoli rinse and set aside.
Cook bacon, cut up and set aside

For the Dressing:
Mix Mayo, Apple Cider Vinegar, and Sweetener into bowl until well combined.
Add all other ingredients into the dressing mix: Broccoli, Bacon, Sunflower Seeds, Onion and Cheese.
Mix until broccoli is well covered in the dressing. Serve right away or store in the fridge.

Note: Feel free to add any other keto ingredients to your liking.

Approximately how much cheese did you add. I see it in the pic, and instructions, but it is not listed in the ingredient list. Is it cheddar cheese? Thank you.

OMG i’m so sorry i never saw this comment. There is approximately 1/2 cup of Mozzarella cheese. I just noticed it is missing when you mentioned it so thank you i will get that fixed. Thank you so much
