2 lbs Ground Beef
1/2 Large Onion
2 TBSP Minced Garlic
4 TBSP Taco Seasoning
8 Large Eggs
10 oz Can Rotel, drained
2 1/2 Cups Shredded Cheese
1/2 Cup Water
1/4 tsp salt
1/4 tsp pepper
1 tsp garlic powder
12 x 9 Pan
Add oil to skillet and add onion to Sautee. Cook 3-4 minutes and add garlic. Cook until fragrant about 2 to 3 min.
Add ground beef and cook until browned
Drain meat and add back to skillet
Add taco seasoning and water and mix well until ground beef is well seasoned
In a bowl, combine ground beef, can of drained Rotel and 1/2 cup shredded cheese. Mix well and add to baking dish. Spread mixture evenly.
Add 8 eggs to bowl with 1/2 cup Heavy Cream. Add in salt, pepper, garlic powder and whisk until well combined Pour egg mixture over ground beef and make sure it is all covered evenly.
Add the remaining cheese as the top layer over the eggs
Bake at 350 for 30 - 35 minutes
After removing from oven, let sit for a few minutes before slicing
Top your Taco Bake with your favorite toppings.
